I'm *in love* with Isa's new book Vegan Brunch. I've enjoyed reading it, cover to cover and I've sticky noted many recipes I want to try. This morning I made the frittata. I'm a huge fan of tofu scramble so I figured I'd love this dish as well and I was right! I used Isa's recipe as guide and threw in veggies and herbs I had on hand. There was a noticeable difference between this dish and tofu scramble and I like that you've got that extra 20 minutes (while it bakes) to make coffee, toast, clean up, do dishes, go back to bed...endless possibilities. Check out the final product...
Switching gears, on Thursday night I planned secret date night (Grant and I take turns planning some time together and we keep the details a secret from the other) and it was a fun time. I made a picnic dinner (details to follow) and we headed to Wolftrap to see The Rat Pack is Back. Grant loves Frank Sinatra so I thought he might enjoy this show. Wolftrap is great because you can bring in food and wine and enjoy a nice evening while being entertained. I was a little (ok a lot) worried because it had been raining and the forecast showed more rain likely. That's not good when your picnicking and watching a show on uncovered lawn seats. Happily the rain stayed clear of us and we enjoyed great food and a fun show. It was uncanny how much the performers sounded and acted like the originals.
I've posted some pictures below but I also wanted to share our picnic menu. I made dishes that would complement each other and mix nicely. It was a tasty summer meal and I'll definitely make this menu again. The menu included...
white wine
olive mix
strawberries with balsamic vinegar (from the vegan table)
spinach salad with green apple, avocado and vinaigrette
chesapeake tempeh cakes (from vegan brunch)
chocolate chip cookies
